摘要：
研究氧化剂、还原剂、部分食品添加剂、金属离子对落葵色素稳定性的影响，并对其影响结果进行了讨论。
Abstract：
The effect of some oxidant reductant food additives and metalions on the stability of basellaceae pigment were studied. The results of influentially were discussed.
